According to Department of Science and Technology (DOST) Secretary Fortunato de la Pea, a large number of micro, small, and medium companies (MSMEs) have shown interest in vacuum-freeze drying technology as a commercial innovation.

According to a recorded report, at least 60 people attended a virtual session on the use of vacuum-freeze drying facilities held by the DOST on September 2.

According to him, the participants were from the food industry, cooperatives, farmer organizations, and the government.

“Among the benefits of this technique are preservation, shelf life, and hygroscopicity, or water-absorptivity, which allows for simple reconstitution,” de la Pea said.

In comparison to other drying techniques, such as air-drying or sun-drying, the resource person discussed how the vacuum freeze-drying process maintains the nutritional content of fruits and vegetables, according to him.

“The speaker, Dr. Adelisa Dorado, an associate professor at the University of the Philippines – Los Banos, also highlighted lengthy processing times and high operational costs as drawbacks of this technology,” he said.

Meanwhile, the Cavite Provincial Agriculturist Office has shown interest in implementing the technology for its aided farmers’ organization, according to de la Pea.

According to him, the DOST-Calabarzon purchased vacuum freeze-drying equipment, which is now located in the Calabarzon Food Solutions Hub in Laguna, for use by the Association of Laguna Food Processors and other food businesses in the area in creating and commercializing food items.
